This is a perfect dish to cook anytime, easy as cooked all in one pot from bake to serve. Can also be a perfect dish for entertaining, just served with a side salad. The fish can be varied depending on what is available, I used cod, smoked haddock and salmon with fresh cooked crevettes to garnish. To make this more luxurious add scallops, tiger prawns and mussels.

  • 1 Tbsp Olive Oil

  • 2 1/4 lbs (1kg) Fish – Cod, Smoked Haddock, Salmon

  • 5 fl ozs (150 ml) dry white wine

  • Fish Stock Cube

  • 1 Tbsp Arrowroot

  • 2 Tbsps Coconut Cream

  • 5 chopped Gherkins

  • 1 Tbsp chopped fresh Parsley

  • 1 chopped Shallot

  • 1 inch of fresh Ginger (to taste)

  • 3 Celery Ribs chopped

  • Salt and freshly milled black pepper

For the topping:

  • 2 lbs (900g) cooked new potatoes unpeeled

  • 1 Tbsp Olive oil

  • 1 Tbsp ground Almonds

  • Sprinkle of Sea Salt

  • Fresh cooked Crevettes


  1. In a cast iron skillet heat the olive oil.
  2. Add shallots, ginger, celery and gherkins cook until soft.
  3. Next add the arrowroot, cook for a few mins then add white wine and fish stock.
  4. Add fish mixture and parsley, cook until the fish is just nearly cooked.
  5. Take off the heat and slice cooked potatoes and arrange over the top, brush with olive oil and sprinkle over the ground almonds and sea salt.
  6. Take the cast iron skillet and slide under a very hot grill, grill until golden brown.

Garnish with cooked crevettes

Serve with peas and a side Salad
